Butter Biscuits

Butter and biscuits, my daughter's two favorite things.

Ingredients

  • 1/2 cup unsalted butter

  • 2 1/2 cups (300g) all-purpose flour

  • 2 tsp baking powder

  • 1 tsp baking soda

  • 1 tbsp granulated sugar

  • 1 tsp salt

  • 2 cups buttermilk

Instructions

  1. Adjust oven rack to upper-middle position, preheat oven to 450ºF and pull out your 8x8-inch baking pan (glass or metal).

  2. In large mixing bowl, whisk together flour, baking powder, baking soda, sugar & salt.

  3. Add buttermilk and stir until just combined, do not overmix.

  4. Cut butter into smaller pieces and place in the 8x8 baking dish. Place dish in oven to melt butter, this will only take 1-2 minutes, remove pan from oven.

  5. Carefully spoon batter across baking dish and spread evenly to edges of pan.

  6. Using a sharp knife or bench scraper, score dough into 9 squares (this promotes even baking).

  7. Bake for 22-25 minutes, rotating pan halfway through baking. Tops will be light golden brown and a toothpick inserted into center of biscuits should come out clean. Cool slightly before serving.
