M&M Cookies

(yield 18 cookies)


  • 2 1/4 cups (270g) all-purpose flour

  • 1 tsp table salt

  • 3/4 tsp baking soda

  • 12 tbsp butter, melted

  • 1 cup (213g) brown sugar

  • 1/2 cup (100g) granulated sugar

  • 1 egg

  • 1 egg yolk

  • 2 tsp vanilla extract

  • 2 cups M&M's


  1. Preheat oven to 425ºF. Line 2 baking sheets with parchment paper.

  2. Combine flour, salt and baking soda.

  3. In large bowl, whisk together melted butter, brown sugar and granulated sugar until thoroughly combined. Whisk in egg, yolk and vanilla until fully combined and mixture looks emulsified. Add half of the flour mixture to wet ingredients and combine with rubber spatula. Stir in M&M's and remaining flour mixture, and combine.

  4. Using cookie scoop (about 2 tbsp) scoop cookies onto prepared making sheet. If you have M&M's left over, add about 4-5 to the top of each cookie to make them even more pretty.

  5. Bake for 8 minutes. Cookies will be puffed and still very light in color and seem underdone. Let cookies cool on baking sheet for 5 minutes, then transfer cookies to a cooling rack using metal spatula. Let cookies cool for 10 minutes before serving.
