Ingredients
2 tbsp olive oil
3 cups chopped yellow onions (3 onions)
1 tsp fresh thyme leaves
2 tsp salt
1 tsp ground black pepper
3 tbsp Worcestershire sauce
1/3 cup chicken broth
1 tbsp tomato paste
2 eggs
2 1/2 pounds ground beef (81 percent lean)
1/2 cup plain dry bread crumbs
1/2 cup ketchup
Instructions
Preheat oven to 375ºF. Line a rimmed sheet pan with parchment paper.
Heat sauté pan over medium heat. Add olive oil and once it starts to shimmer sauté onions, thyme, salt & pepper for about 10 minutes until onons are soft and translucent. Turn off the heat and add Worcestershire sauce, chicken broth & tomato paste. Allow to cool slightly.
In a large bowl whisk eggs, then add beef and sprinkle bread crumbs and onions over meat. Mix all together with forks or hands, be gentle, don't squeeze or meat loaf will be dense. Shape the meat mixture into a rectangular loaf and place on prepared pan. Spread ketchup evenly over the top of meat loaf. (Place a pan of hot water in the oven on the rack below the meat loaf as you cook it, and this will prevent the top from cracking.) Bake meat loaf for 1 to 1 1/4 hours, until internal temperature is 160ºF.
