Apple Crisp

Ingredients

Filling

  • 5 pounds apples (McIntosh)

  • 2 tbsp freshly squeezed lemon juice

  • 1/4 cup rum, apple juice, apple cider or water

  • 1/2 cup brown sugar

  • 3 tbsp butter, melted

  • 1/4 cup all-purpose flour

  • 2 tsp ground cinnamon

  • 1 tsp ground nutmeg

Topping

  • 1 1/2 cups all-purpose flour

  • 3/4 cup granulated sugar

  • 3/4 cup light brown sugar

  • 1/2 tsp kosher salt

  • 1 cup oatmeal

  • 1 tsp cinnamon

  • 1 tsp baking powder

  • 1/2 cup cold butter, cut into small pieces

Instructions

  1. Preheat oven to 350º F. Butter a 9x14x2 inch baking dish

  2. Peel, core and slice apples about 1/4" thick. Combine apples with remaining filling ingredients and pour into prepared baking dish.

  3. For the topping: In medium sized bowl whisk together flour, sugars, salt, oatmeal, cinnamon and baking powder. Using fingers, mix butter into topping mixture until crumbly and butter is the size of peas. Scatter evenly over the apples.

  4. Place baking dish on a sheet pan lined with parchment paper or foil for easy clean up. Bake for one hour, until top is brown and apples are bubbly. Let sit for at least 30 minutes to firm up. If you cut into the apple crisp too soon it will be a watery mess. Serve with vanilla ice cream, whipped cream or alone.
