When you have buttermilk on hand, these waffles are so good!
2 cups all-purpose flour
1 tbsp sugar
1 tbsp baking powder
1/4 tsp salt
1 3/4 cup buttermilk
1/2 tsp vanilla extract
1/2 cup butter, melted
Preheat waffle iron to desired temperature.
In a large bowl mix together flour, sugar, baking powder & salt. Use a separate medium-sized bowl or large measuring cup to mix the wet ingredients. Beat the eggs, then stir in the buttermilk, vanilla & butter. Pour liquid mixture into dry ingredients, using spatula mix until well blended.
I like using a large cookie scoop to ladle batter into waffle iron (my waffle iron holds about 2 1/2 scoops of batter per waffle). Cook waffles until golden and crisp. Serve and enjoy!
