Rosemary Roasted Cashews

This recipe is from Ina Garten, so you know it's going to be amazing. I buy the big container of cashews from CostCo, so there will be leftovers and I store them back in the big plastic container they came out of. I serve these as snackers for all parties.


  • 2 1/2 pounds cashew nuts

  • 1/4 cup coarsely chopped fresh rosemary leaves

  • 2 tbsp melted butter

  • 1 tbsp brown sugar

  • 1 tbsp kosher salt

  • 1 tsp cayenne


  1. Preheat oven to 300ºF

  2. Place nuts on an ungreased baking sheet and bake for about 10 minutes until they are just warmed through.

  3. Meanwhile, combine the rosemary, pepper, sugar, salt and butter in a large bowl. Toss the warm nuts with the rosemary mixture until the nuts are completely coated. Serve warm or store at room temperature.
