Ingredients
2 cans black beans, rinsed & drained
1 small onion, diced
1 jalapeno pepper, diced
2 cloves garlic, chopped
olive oil
1 bay leaf
salt & pepper
Instructions
In large skillet, heat a two count of olive oil over medium heat. Add onions and cook until translucent, about 5 minutes. Add jalapeño, garlic and bay leaf to onions and sauté for another 3 minutes.
Add beans and 1 cup of water to vegetable mixture. Bring to a boil, then reduce the heat to low, cover and simmer for 1 to 1 1/2 hours.
Season to taste with salt & pepper. Remove bay leaf and serve.
