Spicy Black Beans

Ingredients

  • 2 cans black beans, rinsed & drained

  • 1 small onion, diced

  • 1 jalapeno pepper, diced

  • 2 cloves garlic, chopped

  • olive oil

  • 1 bay leaf

  • salt & pepper

Instructions

  1. In large skillet, heat a two count of olive oil over medium heat. Add onions and cook until translucent, about 5 minutes. Add jalapeño, garlic and bay leaf to onions and sauté for another 3 minutes.

  2. Add beans and 1 cup of water to vegetable mixture. Bring to a boil, then reduce the heat to low, cover and simmer for 1 to 1 1/2 hours.

  3. Season to taste with salt & pepper. Remove bay leaf and serve.
