Bagel Breakfast Casserole


  • 4 plain bagels, cut into bite-size pieces

  • 2 bell peppers, diced

  • 10 slices cooked bacon, chopped

  • 10 large eggs

  • 2 cups whole milk

  • 1 tsp ground mustard

  • 1/2 tsp salt

  • 1/4 tsp ground black pepper

  • 1/4 tsp smoked paprika

  • 3 cups shredded cheese, smoked gouda

  • 6 ounces block cream cheese, cut into bite-size pieces


  1. Preheat oven to 375ºF. Grease a 9x13 inch baking pan.

  2. In the prepared baking dish, layer bagel pieces, bell peppers and bacon. Whisk together eggs, milk, ground mustard, salt, pepper and paprika in a medium mixing bowl. Stir shredded cheese into milk mixture. Pour evenly over bagel mixture. Evenly scatter the bite-size pieces of cream cheese all over casserole.

  3. Bake for 40-50 minutes or until center is set and edges are golden brown. Remove from oven and allow to cool for 10 minutes before slicing.

*This casserole can be made the day before. When ready to bake, remove casserole dish from fridge to bring to room temperature some while you preheat the oven.
